I've been tinkering with scampi recipes for a while and was never quite satisfied until the other night when I created this one. Everyone raved and said I should post it. I hope you enjoy it.
⅓ cup extra virgin olive oil
3 cloves garlic, minced
¼ cup diced red bell pepper
1 pinch red pepper flakes
1 pound peeled and deveined large shrimp
1 cup flour for dredging
1 tomato, diced
2 tablespoons fresh lemon juice
⅔ cup dry white wine
3 tablespoons butter
1 tablespoon chopped fresh parsley
