Took another good-but-boring pancake recipe and added the cinnamon, nutmeg, and raisins and presto-change-o it's a giant healthy oatmeal raisin cookie!
1 ½ cups old-fashioned rolled oats
1 ½ cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 ½ cups buttermilk
1 cup milk
⅓ cup white sugar
¼ cup vegetable oil
1 egg
½ cup raisins
3 tablespoons chopped walnuts (Optional)
1 teaspoon vegetable oil, or as needed
