Garlic Chicken Thighs with Olives & Potatoes

  • ¾ teaspoon salt, divided

  • 4 tablespoons extra-virgin olive oil, divided

  • 1 teaspoon Italian seasoning

  • 4 bone-in chicken thighs (about 2 pounds), skin removed

  • 1 pound yellow potatoes, diced

  • 4 medium carrots, diced

  • 2 cups grape tomatoes, halved

  • ½ cup dry white wine

  • ¼ cup Castelvetrano olives, quartered

  • 1 tablespoon capers, rinsed
