Flash blasted Broccoli and Feta Pasta
Broccoli quickly sautéed at high heat with feta and tossed into pasta. Crisp, salty, and super fast.
Ingredients
- 1 (8 ounce) package broccoli florets
- 1 (16 ounce) package uncooked linguine pasta
- 5 tablespoons olive oil, divided 1/2 teaspoon salt
- 1 medium onion, chopped 1 clove garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 cup chopped sun-dried tomatoes (packed in oil) 3/4 cup dry white wine
- 1 (15 ounce) can whole peeled tomatoes, drained and chopped 3 cups baby spinach
- 1 1/2 tablespoons fresh lemon juice
- 4 ounces feta cheese, crumbled 1/4 cup pine nuts, toasted
