- 1/2 cup butter, divided 5 pollock fillets
- 1 small onion, diced
- 1 (7 ounce) can escargot, drained
- 2 cloves garlic, chopped
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano 1/2 teaspoon dried basil
- 1/4 cup grated Parmesan cheese for topping
