This easy chicken Caesar pasta salad is a summertime favorite. We sometimes make it with shrimp instead of chicken.
1 (16 ounce) box mini penne pasta
1 ½ pounds chopped cooked chicken
½ cup diced green bell pepper
⅓ cup grated Parmesan cheese
⅓ cup chopped red onion
2 large hard-boiled eggs, chopped
½ (8 ounce) bottle creamy Caesar salad dressing, or to taste
