- 3 1/2 cups penne pasta 1 tablespoon olive oil
- 4 boneless chicken breasts, cut into 1/2 inch cubes
- 1 red bell pepper, chopped 1 chorizo sausage, cut into chunks
- 1 1/2 cups tomato puree 1 cup light cream
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup shredded Cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
