1 medium (about 12 oz.) sweet potato, scrubbed and cut into 1/2-inch cubes (about 2 1/2 cups)
1 tablespoon olive oil
¼ teaspoon kosher salt, divided, plus more to taste
Black pepper, to taste
1 tablespoon unsalted butter
4 ounces shallots (about 2 medium), peeled, trimmed and thinly sliced lengthwise (about 1 cup)
1 tablespoon apple cider vinegar
8 ounces small Brussels sprouts, trimmed and halved (about 2 cups)
1 ounce aged white cheddar cheese, finely shredded (about 1/3 cup)
3 tablespoons sour cream

All-purpose flour, for dusting
1 large egg, beaten
1 ½ teaspoons poppy seeds
