Brussels Sprouts and Sweet Potato Hand Pies

Lightly mashed sweet potatoes, brussels sprouts, tangy sour cream, and aged cheddar make up the creamy-cheesy filling. It's a simple mixture, but it tastes like a handheld bite of Thanksgiving.

Ingredients

  • 1 medium (about 12 oz.) sweet potato, scrubbed and cut into 1/2-inch cubes (about 2 1/2 cups)

  • 1 tablespoon olive oil

  • ¼ teaspoon kosher salt, divided, plus more to taste

  • Black pepper, to taste

  • 1 tablespoon unsalted butter

  • 4 ounces shallots (about 2 medium), peeled, trimmed and thinly sliced lengthwise (about 1 cup)

  • 1 tablespoon apple cider vinegar

  • 8 ounces small Brussels sprouts, trimmed and halved (about 2 cups)

  • 1 ounce aged white cheddar cheese, finely shredded (about 1/3 cup)

  • 3 tablespoons sour cream

  •  

  • 1 recipe Sister Pie All-Butter Pie Dough, rolled and cut into 20 (4-inch) rounds, chilled

  • All-purpose flour, for dusting

  • 1 large egg, beaten

  • 1 ½ teaspoons poppy seeds

  • 1 teaspoon flaky sea salt

  • Arugula salad, for serving, if desired
