Almond Pancakes
Almond Pancakes are light, fluffy pancakes made with almond flour or sliced almonds for a nutty flavor and extra nutrition. Naturally gluten-free (if using almond flour), they’re a delicious and wholesome breakfast option.
Ingredients
- 1/2 cup (4 ounces) mascarpone cheese, at room temperature
- 1 1/2 cups water
- 1 tablespoon sugar
- 2 teaspoons pure almond extract
- 1 teaspoon pure vanilla extract
- 2 cups buttermilk pancake mix (recommend: Krusteaz)
- 4 ounces almond paste, cut into 1/4-inch pieces
- 2 tablespoons unsalted butter, at room temperature
